Dark chocolate and cherry muffin recipe

These dark chocolate and cherry muffins have become a staple in our house. With five ingredients, they are quick to prepare, and quick to cook. The combination of slow release carbohydrates, protein and fat have made the muffins a go-to for breakfast, pre-workout or as a snack. I’ve only recently added the cherries and their juiciness has lifted the recipe to another level!

 

Recipe

Healthy dark chocolate and cherry muffins

Ingredients

3 x large bananas - mashed

125g peanut butter

200g oats

90g dark chocolate - chopped into small chunks

100g frozen cherries

Method

  1. Preheat oven to 180C (fan) and line a muffin tin with 12 muffin cases.

  2. Mix together the mashed bananas with the peanut butter.

  3. Stir in the oats, chocolate chunks and cherries.

  4. Divide the mixture equally across the muffin cases and place in the oven for 10 minutes.

  5. Remove from oven and cool on a cooling rack.

  6. They rarely last more than a few days in our house! They’re at their best in the first three days, and can be stored in an air tight container.
